The Tom Collins, circa 1875, got its name from the style of gin used to make it. Originally it began, circa 1860, as a humble Collins and made with genever (Jenever). A refreshing, tall drink, alternative to a gin & tonic.
Tom Collins
60ml Old Tom Gin
20ml Lemon Juice
15ml Sugar Syrup
Soda Water
Garnish: Lime wedge
Add gin, juice and syrup shaker with ice and shake. Strain into a tall tumbler with ice. Top with soda water and garnish with lime wedge.
